The dominant model is to avoid water: free cooling and closed circuits. GTD (an operator with data centers in Chile, Peru and Colombia; the source mentions only Peru and 11 data centers in the region, not Guatemala) declares WUE = 0 across all its data centers, with air cooling and closed chilled-water circuits and no dependence on the grid or on wells: it is a regional design reference, not a local case. Tigo Business operates 'Fraijanes II' with a Tier III Certification of Design Documents from the Uptime Institute (the audit corrected 'Tier IV'); its water consumption is not disclosed, nor is that of Claro's data centers. The only Tier IV registered by Uptime in Guatemala is KIO/GUA (KIO Networks), design only. Given the overexploitation of the metropolitan aquifer, a hyperscaler using evaporative cooling would face physical and reputational risk; dry design is the de facto local standard.
